• The day of the greasy spoon cafe in motorway service areas may be over following a decision by service area group Welcome Break to ask a French chef to improve its food. Top London restauranteur Albert Roux has been taken on as a consultant to create new and Continental-style dishes for truck drivers and other motorway users at Welcome Break's 27 Granary Restaurants. Roux will also help develop a network of Italian-style coffee shops called Caffe Primo for the Forte-owned company. "We are trying to develop healthier menus and new dishes that will create greater variety and more choice", says Welcome Break, which also plans to open McDonalds fast food restaurants in its service stations in 1996 following a successful trial at Fleet Services on the M3.
